The hand-picked grapes are pressed carefully and slowly to extract the best components from the grapes.
After a light sedimentation, the must is placed in French oak barrels for fermentation (of which 20-25% are new).
The wine is bottled at the end of the second winter after the harvest, i.e. after approximately 14-16 months.

The color is beautiful golden and the wine has a fantastic balance between acidity and minerality and a very elegant and long finish.
