Collection: Ermes Pavese

The small winery Ermes Pavese has its roots in Morgex in Valle d'Aosta. The family is still the engine and the heart of the production of the wine, and all steps in the production are followed personally by Ermes.

The winery is based in the small village of La Ruine, which is also home to the family and to the vineyards dedicated to the dessert wine Nivine, which is made from overripe grapes.

Ermes Pavese has around three hectares of vineyards, which are very fragmented. The land is partly owned and partly leased. The fields are between 900 meters and 1,200 meters high, which reduces the spread of diseases and pests.

This can also be seen in the fact that Ermes Pavese's Prié Blanc vines are not, as usual, grafted onto American vines, which is otherwise necessary to avoid phylloxera (wine louse), but which does not reach the roots at this height.

The wines from Ermes Pavese are fantastic and must be tasted.
