Podere Le Ripi Canna Torta Toscana Bianco IGT 2021
The grapes ferment spontaneously in terracotta amphorae in the coldest place in the cellar. The choice of terracotta is made to enhance the effect of the maceration the wine must go through and to create the best setting for the living product.
This vintage is the first vintage with grapes from own fields in the western part of Montalcino. The subsoil is marked by old river deposits, and the ground here is filled with stones and rocks from galestro to alberese and granite.
The grapes were harvested last week in September.
Fermentation and maceration for 9 months in terracotta jars. The wine is subsequently placed in concrete for 7 months to allow it to decant naturally and is then bottled without sulphites.
The color is lovely golden.
Different impressions of both sweetness, salt, bitterness and acidity make the wine rich and fleshy and very tasty and deliciously spicy.
The taste is voluminous like umami and at the same time fresh and fruity - a really nice balance.
