Comes from 19-year-old canes from a northeast-facing field at an altitude of 400 meters. This is a Brunello certified field, and it is exclusively these young canes that are used for Rosso di Montalcino. 19 years is not quite young, but Fabio does not think they are ready yet for Brunello di Montalcino.
The wine has fermented for 19 days in stainless steel with 5 pumpdowns each day.
After the first fermentation, the malolactic fermentation took place in Slavonian oak, and subsequently the wine was aged for 12 months in a Slavonian cask of 10 hl and one of 32 hl.
A super delicious case.
La Fornace Rosso di Montalcino has always been a wine with great longevity, and this is certainly the case with this wine. The wine is suitable for pasta and white meat, but it can also easily go with stronger dishes of pork and beef.
The grapes here were harvested on 22 September 2020 and bottled on 8 April 2022.
