Ermes Pavese Nathan Blanc de Morgex et de La Salle DOC 2021
Nathan Blanc de Morgex et de La Salle comes exclusively from the best grapes from one of the highest ranked vineyards in Europe.
The grapes are 100% Prié Blanc and come from a single field in Morgex with approx. 40-year-old vines, at an altitude of 900-1,200 meters.
The wine appears golden and in the nose there are hints of ripe fruit and dried apricots.
The taste is really voluminous, deliciously intense and very mineral.
Goes well with all kinds of meat, medium-aged cheeses, foie gras and shellfish. Can easily be used for the whole meal, including red meat.
Very small production. A wine to be tasted!
It is harvested by hand in the last week of September or the first week of October.
The grapes are soaked in cold water for 48 hours before undergoing a gentle hand pressing. Fermentation takes place for the most part (70%) in barriques with frequent stirring.
After 12 months, it is mixed with 30% which is fermented in stainless steel tanks. The wine is then further matured for approx. 10 months in the bottle.
