75% mencía, 20% brancellao and 5% mouratón and sousón from vines that are from 61 to 111 years old and that stand at an altitude of 300 - 700 meters.
Each plot is harvested and vinified separately. Natural malolactic fermentation in open 500L used oak barrels. Then fermentation in 300 L used oak barrels. Transferred to maturation in used French barriques for at least 24 months. It is then aged for 6 months in large French oak barrels of 15 hl before bottling. Finally, the wine is stabilized for a minimum of 16 months in the bottle before release.
Meditation wine that is incredibly pleasant while challenging the senses through extraordinary complexity, purity and fine taste details. The structure is almost reminiscent of classic Burgundy, but with a density of fruit that can only come from this unique terroir.
A wine that will only get better in the coming years.
