-
Grape ripening: The Prosecco grapes must be ripened to the right level so that they meet the requirements defined by the Prosecco DOCG.
-
Vinification: Prosecco DOCG must be produced using the Charmat method, where fermentation takes place in steel tanks instead of bottles.
-
Sugar content: Prosecco Non Dosato must be free of added sugar or other substances.
-
Labeling: Prosecco Non Dosato must be marked with "Non Dosato" on the label so that consumers know it is free of added sugar.
-
Control: Prosecco Non Dosato must be approved by the Consorzio di Tutela della Denominazione di Origine Controllata e Garantita, which is the official organization that oversees the production of Prosecco.
